Tonight, I fixed a meal I've made with success in the past - Chickpea Cutlets from Veganomicon. These are dense, chewy, hearty little cutlets, and I like using the leftovers on salads, or cut up and dunked in barbeque sauce like chicken nuggets. I baked them to give them a crunchy exterior, and they came out pretty good.

While they were delicious, a lack of soy sauce and fresh garlic in my kitchen meant that I had to improvise a little, which changed the flavor profile slightly, making the cutlets perfect with barbeque sauce. The Boy and I tried both ketchup and barbeque, and agreed that while the barbeque sauce enhanced the savory flavor of the cutlet, that the ketchup overwhelmed it. I liked dipping mine in bbq sauce and the mashed potatoes. The meal was filling and hearty - definitely fantastic for an early fall evening.
