It’s Saturday! The Boy and I both slept in today – it was a busy Friday night for us, and we took time to catch up on sleep this morning. Of course, we both woke up hungry, so I set to work fixing some lunch (it was a little later in the day). While I was waiting for The Boy’s lunch to cook up, I took a whole wheat bagel, halved it, and topped it with some pasta sauce, low fat ricotta cheese, and a sprinkle of Italian blend shredded cheese before popping it all into the oven to let the cheese get melty and the bagel get crispy.
It was delicious! I loved the bubbly, crispy cheese, and the smooth flavor of the ricotta was amazing to have on a pizza bagel. This was great fuel for our afternoon.
Our old roommate was in town with his wife – they are preparing to move here – and we were trying to meet up with them and get a little bit of shopping done, so after lunch, we got into the car and headed northward to the mall for some catching up and some shopping.
It was fun to spend time catching up. The Roommate’s wife and I browsed the Hallmark store and FYE, and I was able to pick up a birthday card for The Boy and browse for some birthday presents. She and I chatted about her move here, and I was able to pick up a new pair of dark wash jeans.
Once we finished up with the mall, we headed over to Best Buy, where I was able to stealthily pick up The Boy’s birthday present, as well as a new toy – which I will write about later, I promise! Once all of our shopping was finished, we made our way to Steak n Shake, where I got some mini burgers and onion rings, and shared a cookies and cream milkshake with The Boy. We wrapped up the day handing out some candy to the kids trick-or-treating in our apartment complex, and watching some You, Me, and Dupree. It was a good Saturday. I can’t wait to see what tomorrow will bring. How has the start of your weekend been?
