I am sorry for not getting a post in last night! I had a busy day and we didn’t end up getting home until almost one this morning. Our old roommate moved back to town with his wife, and we decided to make a trip up to their apartment to spend an enjoyable evening playing video games. A friend of ours was visiting from Chicago, and it was nice to get to visit – we hadn’t seen him since our roommate’s wedding last June.
Getting in that late meant that we slept in this morning. I didn’t wake up until after ten, when our room was filled with bright morning light and The Boy had already slipped downstairs to keep the cats busy and to let me sleep. When I came downstairs I was ready for breakfast and baked some biscuits. Breakfast somehow didn’t make it onto my camera, as I ate it before I had a chance to take pictures, but I had two biscuits with butter and a container of honey Oikos (on sale at my grocery store last week) mixed with some Grape Nuts for crunch.
This afternoon was both relaxing and productive. I was able to tackle a couple writing projects, and we ran some errands, getting some new cat toys and picking up some groceries. Once we’d finished running around, I did some more running, spending a half hour at the gym on the treadmill. It was nice to stretch my legs and get moving, and I came home ready to fix dinner.
I have been looking forward to this meal all week, and was happy to put together a big pot of chicken and noodles, using whole wheat egg noodles that plumped and made for a very noodly meal. Alongside my bowl of chicken, noodles, and carrots in broth, I had a spinach salad with cucumber, gherkin, and broccoli. I topped it with cheese and Italian dressing. It was a homey, comforting meal that filled me up to the brim!
Now, The Boy and I are wrapping up our weekend, looking at Cake Wrecks and readying for the week and holiday. I hope you all had a lovely weekend, and I’ll see ya tomorrow!
