I had another early morning today, and decided on a breakfast that would pack a punch. Normally, I would go for some oats, but today, I wanted savory and decided to make an omelet.
While I mixed together one egg and two egg whites, I sautéed some mushrooms in a bit of butter. I love mushrooms made this way – it really brings out their earthy flavor. Once the mushrooms were finished, I scooped them out of the pan and poured in my egg mixture. Once the eggs were nearly set, I added my mushrooms and some cheese and folded it up.
It was soo good. Right after this photo was snapped, I dove into the melty, cheesey omelet, which was oozing with flavor. I loved every bite, and the pepper I sprinkled on top enhanced all of the flavors. I think this was my best omelet yet! I didn’t have anything carby with my breakfast because of how satisfying this was, and ended up munching some matzo mid-morning when my tummy started grumbling.
It was bright and warm out this afternoon, and I enjoyed taking time to go for a walk in the sun. Tomorrow is forecast to be even warmer than today – and by the weekend, it’s supposed to be close to eighty! I can’t believe that a few weeks ago we were experiencing freezing cold temperatures – spring moved in fast this year!
I wanted something springy for dinner this evening, and decided to fix something using one of my favorite spring vegetables: asparagus!
Using jarred alfredo sauce and sautéing some chicken, I put together a delicious pasta dish alongside tender-steamed asparagus, which I love for its flavor and versatility. Alongside my pile of chickeny pasta, it really helped complete my meal.
I left the table feeling satisfied and spent some time playing with the cats before making my way to the gym for a weight training session. I tried out some new exercises and tested my abilities. It was my first weight training session in about two weeks, and I just decided to have fun with it. I came home feeling like I had worked, and wrapped up my evening with some TV and a small snack before bed.
