The humidity went down! With how warm it has felt recently, today’s mid-eighties temperatures and lower humidity made it feel like mid-September – it was gorgeous out today, and I loved being outside at every opportunity I had.
I started today with a Summer Shape-Up workout. I just started the shape-up a week ago, so I am actually doing week two this week. When I finished at my workout, I was hungry and ready to dig into a summery bowl of overnight oats.
I topped my oats with blueberries and a peanut butter sauce. Unfortunately, I added just a little too much milk to the peanut butter, which made it really thin and soupy, instead of drizzly. I ended up mixing it into the bowl, which made the oats incredibly yummy – they were peanut butter flavored! I love eating overnight oats after a workout – they’re incredibly filling, and the yogurt in them packs a proteiny punch. They definitely keep me full for hours!
My day was pretty busy, and eventually I was headed home for the evening. My lunch was a bit on the late side and really filling, so it took me a little while to be ready to eat dinner, and when I finally got hungry, I wanted something light.
I fixed pan-fried tofu and toast with real butter, and lentil soup.
For some extra veggie power, I stirred a handful of spinach into my bowl before digging in. The Boy isn’t a big fan of tofu, so he opted for some barbeque instead, and we both really enjoyed our meals.
After dinner, we settled in to watch some TV and talk about our day, ending the night with some Alton Brown. “Good Eats” is one of my favorite cooking shows – I love how he gets into the science of everything as he cooks, it’s awesome!
Now we’re ready for bed – I’m tired! I hope you all had a great day, and I’ll see you tomorrow!
