Last night we planned on fixing fajitas for dinner. I got started by sautéing red peppers and onion in some oil on high heat before doing the same with some steak strips. I added some seasoning and when all was said and done, I had a very delicious-looking and smelling beef mixture ready to be stuffed into tortillas and devoured. Except I wanted nachos.
Instead of stuffing some soft flour tortillas with the fajita mixture, I dug out some chips that I received free from Tostitos and Foodbuzz’s tastemaker program:
They were the Tostitos Artisan Recipes Roasted Garlic and Black Bean chips, which I thought tasted a bit like a chip that had already been dunked in refried beans. Not having refried beans last night, I thought they would make an excellent nacho base.
Which I then, of course, covered in shredded cheese.
Before I knew it, I had a stack of topping-covered chips, ready to be devoured.
These were topped with the aforementioned cheese, fajita beef and pepper mixture, lots of medium-hot salsa and a hefty dollop of plain organic yogurt. Each bite was delicious and jam-packed with flavor. The chips definitely added a subtle beany undertone to my meal, and I found that with them, I didn’t even miss the refried beans!
It was definitely a different take on fajitas, crunchy and flavorful, and I could enjoy as much or as little toppings in each bite as I wanted. I can’t wait to try this recipe again – it was filling, delicious, and amazing!
