The Boy recently returned home after two weeks in Japan. He was away on business, which is part of why my blogging calendar has been a little light. While he was away, I found myself craving a cold soba noodle salad with tofu. Since I had all of the necessary ingredients in my kitchen, I decided to try my hand at throwing one together, and it was delicious.
While it was a simple bowl to throw together, I am still working on perfecting the sauce that I used. My original blend was soy sauce, mirin, rice vinegar, and a bit of sugar, but I felt like it was missing something. Next time I may mix in some sriracha sauce. I know this bowl definitely satisfied my cravings for soba and tofu, and the leftovers were enough to make two more large, delicious, filling meals.
Now that The Boy is back from Japan, we are working on catching some things up around the house, while he is becoming adjusted to a 13-hour time difference. For now, though, I think we are headed to bed. I’ll be back soon – with a real update!
