This evening, I decided to go to the gym and do a New Rules of Lifting for Women workout. I haven't lifted as much as I typically like to since I started training for the half marathon, and while I don't need to lose any weight for the wedding, I would like to build a little more muscle in my arms. Weight lifting seemed to be a good idea, especially since it was looking to storm and I've been out running the past few days.
After an hour in the weight room at the gym, I headed out feeling refreshed and strong! It's been a while since I did any squats, pushups, or lunges, and it was nice to get back into that familiarity. Of course, I did have some errands to run on my way home - our refrigerator is a bit on the empty side, so I stopped to pick up some food to get us through the weekend as well as some toiletries.
By the time I made it home from the gym and my errands it was after eight and I was HUNGRY. I wanted something fast, protein-filled, filling, and of course, delicious. Enter: tacos with homemade seasoning. Now,lately I've been cheating on the seasoning mix and using a mix of two McCormick Grill seasonings: garlic and herb and spicy steak, with a dash of cayenne pepper and some cumin for the delicious smoky flavor it imparts. The tacos came together in under fifteen minutes - time I spent cleaning up the kitchen a bit, and man, were they delicious!
My taco was more burrito-like, and included some plain yogurt, lots of shredded cheese, lettuce, taco meat, and salsa, all rolled up. Each bite was packed with flavor and my meal definitely hit the spot. I enjoyed my taco with some plain tortilla chips dunked in some queso dip. YUM! Homemade tacos have to be one of my all-time favorite meals ever. So easy, so delicious, so filling.
