Wednesday I struggled to get out of bed. I was tired. Very tired. I stayed up just that much too late last night and was feeling it intensely. I was bleary-eyed as I washed my hair and got ready for work, and after a slow start, made my way downstairs where I packed my lunch and glanced at my breakfast options. When I paused for a moment to pull the blinds open in our living room, I found myself kneeling on the sofa, with Maggie mewing at me to sit down and pet her.
Maggie does not do this for me often - she is a cat who likes to be loved on her own terms, so I sat down and she immediately climbed into my lap so I could pet her while she purred like a little motorboat. We sat like this long enough that it was time to go and I still hadn't eaten breakfast. I was happy to get to pet Maggie, but my stomach was clear in reminding me that it was early and I still hadn't eaten.
The lack of breakfast before leaving meant that I got to stop and get breakfast out. My bleary-eyed tired brain wanted nothing more than an egg and cheese sandwich for breakfast - something with protein, fat, and carbs to get me jumpstarted and awake. Of course, the awake part would need to be helped with some coffee, too. After carefully considering my options, I found myself pulling into the parking lot of Panera and ordering one of their egg and cheese sandwiches.
It was amazing: a large, crusty warm ciabatta sandwich with an egg that looked to be made the "pour, poke, spread" way as shown on Edible Perspective. The yolk was perfectly cooked through (I can't eat raw/undercooked eggs due to allergy symptoms) and the egg was delicious - like eating a fried egg on a sandwich. Instead of American cheese they use sharp white cheddar, which was perfectly melted and was amazing when combined with the egg and the soft, warm bread.
Each bite was delicious and full of flavor. The coffee was dark roast and perfectly brewed. I added a little half and half and sweetener to make it just how I like it and enjoyed every sip of the dark, rich brew. This breakfast went a LONG way toward helping me wake up and greet the day. Egg and cheese sandwiches are a meal I love but don't eat often enough.
